Clearly I love chocolate and coconut, I experiment a lot in the kitchen using cacao and coconut either fresh or organic coconut cream. Using pure essences makes experimenting fun and you can add some delicious flavours to make scrummy desserts. This flavour came about by using pure orange extract after I finally found a brand that was affordable. The end result was so good I simply had to share this.
Ingredients – 2 large serves or 4 smaller serves
1 can chilled coconut cream (use BPA free cans such as Spiral Foods or Ayam)
¼ cup cashew nuts (soaked overnight)
3 tbsp raw cacao powder
2 tbsp cacao nibs
10 drops pure orange essence
¼ tsp xanthan gum (optional but this makes the mousse so incredibly smooth) xanthan gum is very concentrated you do no need much at all
2-4 Tbsp. pure organic maple syrup or rice malt syrup for a fructose free option
1. Place all ingredients in the OmniBlend and blend on low until smooth. The mixture will gradually start to thicken while blending.
2. Spoon into serving bowls, drizzle with freshly squeezed orange juic and top with more cacao nibs or coconut flakes
